Maryland Style Sauteed Shrimp
Old Line items 1 lb shrimp, deveined 2 Tbs olive oil 1 Tbs + 1 tsp Old Bay Seasoning 1 Tbs lemon juice 1/2 Tbs minced garlic 1 tsp fresh parsley, finely diced 6 Tbs unsalted butter crusty bread
1 Butterfly the shrimp to devein but leave the shell on. Season each shrimp with a pinch of Old Bay (you can lift the shell back to get the seasoning on the shrimp without completely peeling the shell off). 1 tsp is sufficient for a pound of shrimp.
2 Heat the olive oil in a pan over Medium-Low Heat. Add the minced garlic and sauté for 2 mins to brown (but don’t let it burn).
3 Add the remaining 1 Tbs of Old Bay and the lemon juice. Simmer for another 2 mins.
4 Whisk in 4 Tbs of unsalted butter and stir until melted.
5 Add the shrimp and cook until pink (5-6 mins total, or 2-3 mins per side if not completely submerged in the sauce).
6 Remove the shrimp from the pan and place them in a bowl. Add the remaining 2 Tbs of unsalted butter and the fresh parsley. Turn off the heat and stir until the butter melts. Pour over the shrimp and serve with your favorite crusty bread for the obligatory dip-dunking.
